Instructions

Prep Combine the chicken thighs with smoked paprika, the garlic minced, cayenne, salt and half the olive oil until the surface looks uniformly rust-red.

Marinate Cover and leave at room temperature for 40 minutes so the spices penetrate.

Grill Grill the thighs over medium-high heat 6 to 7 minutes per side until charred in spots and the juices run clear when pierced.

Glaze Brush thighs with bbq sauce over medium heat a final 2 minutes per side until the sauce looks tacky and caramelised, tossing scallions on the grill 2 minutes.

Plate Warm the black beans with cumin and lime, spoon onto a plate, rest the glazed thighs and charred scallions on top.
