Instructions

Prep
Dice the potatoes small and chop the onion. Bring the steaks to room temperature and season with salt and pepper.

Sear
Crisp the potatoes and onion in oil over medium-high heat 14 minutes with paprika, turning, until golden and tender.

Sear
Cook each sirloin in butter over high heat 3 minutes a side to 54C for medium-rare, then rest 5 minutes. Cook in batches or use a large pan to fit both steaks.

Fry
Fry the eggs in the same pan over medium heat 3 minutes until the whites set and the yolks stay runny. Cook in batches if needed.

Plate
Slice the steaks and plate each with 2 eggs and crisp potatoes. Add a final grind of black pepper.
