Loosely form the ground beef into a patty slightly wider than the bun and season both sides with salt and pepper.

Fry
Lay the bacon in a cold skillet over medium heat for 6 to 8 minutes, turning once, until deeply browned and crisp, then drain.

Toast
Butter the cut brioche bun and toast in the same skillet over medium heat for about 1 minute until the surfaces are golden.

Sear
Raise heat to medium-high, cook the patty 3 minutes without pressing until a brown crust forms, flip, add cheese, cook 2 minutes until molten.

Plate
Spread whisked mayonnaise and Dijon on the bottom bun, stack shredded lettuce, tomato, onion, cheesy patty, and bacon, cap, and serve at once.
