Bacon Jam Burger

Prep
Form the ground pork into one patty slightly wider than the bun, then season both sides with the salt and black pepper.

Fry
Chop the bacon and fry in a skillet over medium heat for 6 minutes until the fat renders and pieces turn golden and crisp.

Saute
Slice the onion, add to the bacon fat, then stir in the brown sugar, balsamic vinegar and coffee and simmer low 15 minutes until jammy.

Sear
Wipe the skillet, add the vegetable oil and sear the patty over medium-high heat for 4 minutes per side until a dark crust forms with clear juices.

Plate
Melt the American cheese over the patty, toast the brioche bun, layer lettuce and tomato, add patty and bacon jam, then cap and rest briefly.
