Prep
Mince 4 garlic cloves finely. Drain 2 tbsp capers. Chop 4 tbsp fresh parsley. Cut 30g butter into small cubes. Measure 3 tbsp lemon juice and 1 tsp lemon zest. Have all ingredients ready by the oven.

Bake
Preheat oven to 200°C / 400°F. Place fish fillets in a medium ovenproof dish, season with 1 tsp salt and 0.5 tsp black pepper. Scatter minced garlic and capers over fish. Pour 120ml white wine and lemon juice around it, drizzle 2 tbsp olive oil, dot butter cubes on top, scatter lemon zest. Bake 15–17 minutes until fish is opaque and flakes easily with a fork.

Finish and plate
Remove from oven. Scatter fresh parsley over fish and spoon pan juices back over. Serve immediately directly from the dish.
