Barbados Pepper Pot Beef Stew

Prep
Cut 400g beef chuck into chunks. Chop 0.5 onion and mince 1 garlic clove. Season beef with 1.5 tsp browning sauce, salt, pepper, 0.5 tsp thyme, and 0.5 tsp allspice. Marinate 1 hour.
Sear
Heat 1.5 tsp oil in a medium heavy pot over medium-high heat. Brown marinated beef 3–4 minutes until deeply caramelized on all sides. Transfer to a plate.
Saute
Add chopped onion and garlic to the pot, cook 2–3 minutes over medium heat until softened, stirring occasionally.
Build
Return beef to the pot. Add 0.5 scotch bonnet pepper and 1.5 cups water. Bring to a boil over high heat, then reduce to medium-low.
Simmer
Cover and simmer 1.5–2 hours over medium-low heat, stirring occasionally, until beef is fork-tender and sauce reduces to a thick gravy.
Reduce and plate
Taste and adjust seasoning with salt and pepper. Ladle stew into bowls, ensuring each serving has tender beef and rich sauce. Serve hot.
