Prep Shape the ground beef into one patty slightly wider than the brioche bun on a board, then season both sides with the salt and pepper.

Fry Cook the bacon in a dry skillet over medium heat for 5 to 6 minutes, turning once, until the fat renders and the rashers turn deep brown and crisp.

Sear Add the oil to the skillet over medium-high heat and sear the patty 3 to 4 minutes per side until the centre reaches 71C, melting cheddar on top.

Toast Place the bun halves cut-side down in the same skillet over medium heat for 1 minute until golden and lightly crisp, then rest the patty 3 minutes.

Plate Spread BBQ sauce on the bun base, layer lettuce, tomato, cheese-topped patty, bacon, and red onion, then cap with the bun top and serve.
