Bombay Grilled Sandwich
Spiced Vegetable & Chutney Toastie
A Mumbai street toastie built on white bread spread with green coriander-mint chutney, layered with sliced boiled potato, cucumber, tomato, onion and a dusting of chaat masala, then grilled with butter until crisp. Cheddar cheese and more chutney fill the toasted sandwich, served hot with extra chutney alongside.

Prep
Slice the boiled potato, cucumber, tomato and onion thinly on a board, keeping each layer separate and even.

Blitz
Blend the cilantro, mint, green chilli, garlic, lemon juice and salt to a thick smooth glossy paste, scraping down once.

Build
Butter one side of each bread slice, spread chutney on dry sides, stack potato, cucumber, tomato, onion and cheddar, dusting chaat masala.

Grill
Press the sandwich in a buttered pan over medium heat 3 to 4 minutes per side until the bread turns deep golden and the cheese melts.

Plate
Cut the toastie into triangles and serve hot with the remaining green chutney on the side.
