Mix the ground pork with salt and pepper, then shape into one patty slightly wider than the brioche bun with a shallow dimple.

Cook the bacon in a cold skillet over medium heat for 6 minutes, turning once, until browned, crisp, and the fat has rendered; set aside.

Cook the sliced onion in the same skillet over medium heat for 4 minutes until golden, then stir in maple syrup for 1 minute until glossy.

Griddle the pork patty over medium-high heat 3 minutes per side until a deep crust forms and the centre reads 70C, melting cheddar on top at the end.

Fry the egg in butter over medium heat 2 minutes until white is set and yolk runny, toast the brioche bun, spread mayo, stack, and serve.
