Breakfast Burger

A single ground pork patty seasoned and griddled, topped with a fried egg, melted cheddar, crisp bacon, and maple-glazed onions on a toasted brioche bun. The runny yolk and sweet-savoury glaze bring breakfast flavours to a burger, finished with a smear of mayo.

Instructions

1
Prep Mix the ground pork with salt and pepper, then shape into one patty slightly wider than the brioche bun with a shallow dimple.
2
Fry Cook the bacon in a cold skillet over medium heat for 6 minutes, turning once, until browned, crisp, and the fat has rendered; set aside.
3
Saute Cook the sliced onion in the same skillet over medium heat for 4 minutes until golden, then stir in maple syrup for 1 minute until glossy.
4
Sear Griddle the pork patty over medium-high heat 3 minutes per side until a deep crust forms and the centre reads 70C, melting cheddar on top at the end.
5
Plate Fry the egg in butter over medium heat 2 minutes until white is set and yolk runny, toast the brioche bun, spread mayo, stack, and serve.
