Instructions
1
Prep
Pat the chicken wings dry with paper towels and season lightly with salt, letting them sit uncovered on a rack for 5 minutes so the skin surface dries further.
2
Fry
Heat the vegetable oil in a deep pot to 325°F (165°C) and fry the wings for 10 minutes, turning once, until pale gold and just cooked through.
3
Fry
Raise the oil temperature to 375°F (190°C) and fry the wings for 8 minutes, turning once, until deep golden-brown and audibly crisp.
4
Whisk
In a bowl, whisk the cayenne hot sauce, melted butter, and white vinegar together until glossy and fully combined with no butter separation.
5
Toss
Add the hot wings to the bowl and toss until evenly coated and glistening red-orange.
6
Plate
Pile the wings onto a plate with celery sticks and blue cheese dressing alongside for dipping.
