Loosely form the ground beef into a ball and season the outside with the salt and pepper, keeping it cold.

Butter the cut sides of the hamburger bun and toast face down in a dry skillet over medium heat 2 minutes until golden.

Set a cast-iron skillet over high heat, drop in the beef ball, smash it flat, and sear undisturbed 3 minutes until a deep crust forms.

Flip the patty, lay the American cheese on top, and cook 2 minutes over medium-high heat until the cheese slumps and edges crisp.
