Californian Egg White Veggie Wrap (Low-Calorie)

Prep
Mince the garlic clove, slice the roasted red peppers and avocado, and chop the chives on a cutting board.

Sauté
Heat the olive oil in a small nonstick pan over medium heat, add the minced garlic, and cook for 30 seconds until fragrant.

Add the spinach with a pinch of salt, stir over medium heat for 1–2 minutes until wilted. Add roasted red peppers and cook 1 minute until warmed.

Season the egg whites with remaining salt and pepper, pour into the pan, and cook over medium-low heat, stirring gently every 20 seconds for about 3 minutes until just set.

Fold the fresh chives through the egg white mixture and remove from heat.

Heat the whole wheat tortilla in a dry pan over medium heat for 30 seconds per side until pliable and lightly toasted.

Lay the avocado slices down the center of the tortilla, then spoon the egg white and vegetable mixture over them.
