Prep
Slice 300g beef sirloin into strips. Slice 1 onion, chop 1 cup bell peppers into bite-sized pieces, mince 4 garlic cloves. Measure 1 tsp thyme, 1 tsp allspice, and 2 tbsp soy sauce. Have 2 cups cooked rice ready.

Sear
Heat 2 tbsp oil in a large skillet over high heat until shimmering. Add beef strips, cook 3–4 minutes until browned on edges, then remove and set aside. Beef should be seared but not fully cooked through.

Saute
Add onion, peppers, and garlic to the same pan over medium-high heat, cook 4–5 minutes until softened and fragrant, stirring occasionally. Vegetables should be tender-crisp.

Return beef to pan, add thyme, allspice, and soy sauce. Cook 2–3 minutes, tossing constantly, until beef is coated and mixture is slightly caramelized. Beef should be cooked through and glossy.

Divide cooked rice between two bowls. Transfer the beef and pepper mixture onto each bed of rice, scraping any pan glaze over the top. Serve immediately.
