Prep Soak the two cedar planks in water 1 hour. Mix the brown sugar, mustard, crushed garlic, chopped dill, and pepper into a glaze.

Grill Set each salmon side skin-side down on its own plank and spread with the glaze. Grill covered over medium heat 22–24 minutes until just opaque.

Char Halve the lemons and char cut-side down over high heat 4–5 minutes until caramelised and juicy.

Crisp Brush each salmon with its glaze and grill over high heat 4–5 minutes until lacquered and the edges caramelise.

Plate Slide each whole salmon side onto a board, scatter with extra dill, and serve with the charred lemon halves.
