Bacon Jam Burger
A single ground pork patty seared until crusted, topped with a slice of American cheese and a spoonful of sweet-savoury bacon jam cooked down with onion, brown sugar and coffee. Built on a toasted brioche bun with lettuce and tomato, this burger balances rich pork against jammy bacon.

Instructions
1
Prep
Form the ground pork into one patty slightly wider than the bun, then season both sides with the salt and black pepper.
2
Fry
Chop the bacon and fry in a skillet over medium heat for 6 minutes until the fat renders and pieces turn golden and crisp.
3
Saute
Slice the onion, add to the bacon fat, then stir in the brown sugar, balsamic vinegar and coffee and simmer low 15 minutes until jammy.
4
Sear
Wipe the skillet, add the vegetable oil and sear the patty over medium-high heat for 4 minutes per side until a dark crust forms with clear juices.
5
Plate
Melt the American cheese over the patty, toast the brioche bun, layer lettuce and tomato, add patty and bacon jam, then cap and rest briefly.
