Mushroom Swiss Burger
A single ground beef patty griddled and topped with butter-sauteed cremini mushrooms and a slice of melting Swiss cheese, stacked on a toasted brioche bun with mayonnaise. The mushrooms cook down with thyme for a savoury, earthy layer against the seared, crusted beef.

Instructions
1
Prep
Shape the ground beef into a single patty slightly wider than the bun and season both sides with the salt and pepper.
2
Saute
Melt the butter in a skillet over medium heat and cook the sliced mushrooms with thyme 6 to 8 minutes until browned. Scrape aside.
3
Sear
Raise to medium-high and cook the patty in the same skillet 3 to 4 minutes per side until a deep brown crust forms and juices run clear.
4
Melt
Pile the mushrooms onto the patty, lay the Swiss over the top, and cover over low heat 1 minute until the cheese slumps.
5
Plate
Toast the split brioche bun cut-side down 1 minute, spread mayonnaise on the base, set the mushroom-cheese patty on top, cap and serve.
