Instructions

Prep
Preheat the oven to 350F and line a small ramekin or mini loaf pan with parchment, overhanging the sides.

Melt
Combine the dark chocolate and butter in a heatproof bowl set over simmering water on low heat, stirring 2-3 minutes until fully melted and glossy.

Whisk
Off the heat, whisk the sugar and egg into the chocolate mixture until lighter in color and slightly thickened, about 1 minute.

Fold
Sift the cocoa powder, flour, and salt over the batter and fold in with vanilla extract until just combined and no dry streaks remain.

Pour the batter into the prepared pan and bake at 350F for 20-25 minutes until the top looks matte and crackly and a toothpick inserted in the center comes out with a few moist crumbs.

Let the brownie cool in the pan on a wire rack for 15 minutes until firm enough to lift out and slice cleanly.

Lift the brownie out using the parchment overhang and keep in an airtight container at room temperature for up to 3 days.
