Prep Shape the ground beef into one patty wider than the bun, press a center dimple, and season both sides with salt and pepper.

Fry Cook the bacon in a skillet over medium heat for 5 minutes until the fat renders and the strips turn deep brown and crisp, then set aside.

Saute Add the sliced onion and vegetable oil to the same skillet over medium heat and cook 5 minutes until softened, golden, and lightly caramelized.

Grill Sear the patty on a hot griddle over medium-high heat 3 to 4 minutes per side until a browned crust forms and the center reaches 71C, melting cheddar on top.

Plate Toast the brioche cut-side down 1 minute, spread barbecue sauce, layer lettuce, tomato, patty, bacon and onion, cap, and serve hot.
