Denver omelette
Denver omelette is a three-egg fold packed with ham, green bell pepper, red bell pepper and yellow onion, browned in a skillet then finished with melted cheddar. Cooked hot and fast Rocky Mountain diner style, it comes plated with hash browns and buttered toast on the side.

Prep
Whisk the eggs, milk, salt and black pepper in a small bowl until fully blended and slightly foamy, about 30 seconds.

Heat
Melt half the butter in a nonstick skillet over medium heat. Add the ham, bell peppers and onion; cook for 4 minutes, stirring occasionally, until peppers soften.

Pour the egg mixture into the skillet over medium-low heat, tilting to coat the base evenly. Cook undisturbed for 2 minutes until edges set but the center remains glossy and wet.

Scatter the ham mixture and cheddar over one half, fold the bare half over the filling, and hold over low heat for 1 minute until cheese melts.

Plate
Slide the omelette onto a plate, scatter chives over the top, and serve immediately.
