Falafel Wrap
Fried Chickpea Wrap
Spiced chickpeas blended with onion, garlic, cilantro and parsley, formed into balls and deep-fried until crisp. The falafel is folded into a warm flour tortilla with lettuce, tomato, cucumber and a lemon-tahini sauce for a plant-based handheld wrap that is served immediately while the falafel stays golden and crunchy.

Instructions

Prep
Drain and pat the soaked chickpeas dry, then pulse with onion, garlic, cilantro, parsley, cumin, coriander, cayenne, chickpea flour and salt into a coarse crumbly paste.

Chill
Cover and refrigerate the mixture 30 minutes so it firms and holds shape.

Fry
Roll into 6 walnut-sized balls, then fry in 350F vegetable oil in two batches 3 to 4 minutes each until deep golden brown and crisp.

Build
Drain the falafel on paper towel, whisk tahini and lemon juice with water, then warm the flour tortilla and layer lettuce, tomato, cucumber and falafel.

Plate
Drizzle the tahini sauce over, fold the tortilla into a wrap, cut in half and serve immediately.

- 11 large flour tortilla (about 2.5 oz / 70g)
- 1 handful30g lettuce
- 33 tomato slices (50g)
- 55 cucumber slices (40g)
- 2 tbsp30g tahini
- 1 tbsp1 tbsp lemon juice
