Spicy Vinegar Fish Curry — Fish Vindaloo
A fiery Goan curry of white fish in a vinegar-and-chilli paste with garlic, cumin, and warm spices, finished with a touch of jaggery.

Prep
Pat fish dry, rub with 0.5 tsp salt and 0.5 tsp turmeric, rest 5 minutes. Toast cumin seeds, peppercorns, cloves, cinnamon 90 seconds until fragrant, cool, grind to powder. Blend toasted spices with kashmiri chilli, cayenne, garlic, ginger, vinegar, remaining turmeric and salt into smooth thick paste.
Bloom
Heat 3 tbsp oil in heavy skillet over medium heat. Add bay leaves and chopped onion, cook 6 minutes stirring until deep golden brown. Add chopped tomatoes, cook 3 minutes mashing until broken down and oil beads at edges.
Build
Add vindaloo paste to skillet, cook 3 minutes on medium-low stirring until oil beads and masala darkens. Pour in 200ml hot water and jaggery, bring to gentle simmer on medium-low.
Simmer
Slide fish into gravy in single layer, cover, simmer 6–7 minutes on low until fish flakes easily at 145°F internal. Do not stir; gently spoon gravy over fish. Remove from heat, rest 2 minutes.
Plate
Transfer fish and gravy to a serving bowl, garnish with fresh coriander, serve with steamed basmati rice, lime pickle, and roasted papad alongside.
