Fried Turkey

Deep-Fried Whole Turkey

A whole turkey portion submerged and cooked in hot oil until the skin turns deep mahogany and crisp while the meat stays juicy. Seasoned with a Cajun-style dry rub of paprika, cayenne, garlic and herbs. A Southern deep-frying tradition served carved with hot sauce and simple sides.

Instructions

1
Prep Pat the turkey portion completely dry with paper towels, since surface water will cause dangerous oil spatter when it hits the fryer.
2
Dredge Mix the paprika, cayenne, garlic powder, onion powder, thyme, black pepper and salt, then rub all over the turkey and under the skin.
3
Rest Leave seasoned turkey uncovered on a rack for 30 minutes until the skin looks tacky.
4
Fry Lower the turkey into vegetable oil held at 350F and fry about 20 minutes, until the skin is deep mahogany and a thermometer reads 165F.
5
Plate Drain on a rack for 5 minutes, then carve against the grain and serve with hot sauce on the side.
