Deep-Fried Whole Turkey
A whole turkey portion submerged and cooked in hot oil until the skin turns deep mahogany and crisp while the meat stays juicy. Seasoned with a Cajun-style dry rub of paprika, cayenne, garlic and herbs. A Southern deep-frying tradition served carved with hot sauce and simple sides.

Prep
Pat the turkey portion completely dry with paper towels, since surface water will cause dangerous oil spatter when it hits the fryer.

Dredge
Mix the paprika, cayenne, garlic powder, onion powder, thyme, black pepper and salt, then rub all over the turkey and under the skin.

Rest
Leave seasoned turkey uncovered on a rack for 30 minutes until the skin looks tacky.

Fry
Lower the turkey into vegetable oil held at 350F and fry about 20 minutes, until the skin is deep mahogany and a thermometer reads 165F.

Plate
Drain on a rack for 5 minutes, then carve against the grain and serve with hot sauce on the side.
