Green Chile Cheeseburger
A New Mexico style beef patty griddled until crusted, layered with roasted green chiles and melted American cheese on a toasted bun. Chopped Hatch green chiles bring vegetal heat and smoke, balanced by the fatty beef and creamy cheese. Served with lettuce, tomato, onion, and mayonnaise.

Prep
Form the ground beef into a wide thin patty, season both sides with salt and pepper, and press a shallow dimple into the center.

Sear
Heat the vegetable oil in a cast iron skillet over medium-high and cook the patty 3 to 4 minutes until a dark brown crust forms.

Melt
Flip the patty, lay the chopped green chiles over the top with the American cheese, cover and cook 2 to 3 minutes until the cheese is molten.

Toast
Wipe the skillet, set the hamburger bun halves cut-side down over medium heat and toast 1 to 2 minutes until golden and lightly crisp.

Plate
Spread mayonnaise on the bottom bun, layer shredded lettuce, tomato, and onion, set the patty on top, cap, and serve warm.
