Grilled Bratwurst Sausage
Pork bratwurst sausages are simmered in lager beer with onion, then charred over a hot grill until browned and blistered. The links rest in a toasted hoagie roll with beer-braised onions, wholegrain mustard, and drained sauerkraut for tang and bite.

Prep
Slice the onion thinly and pat the bratwurst dry so the links brown rather than steam on the grill.

Simmer
Combine the lager beer and onion in a saucepan over medium heat, add the brats, and simmer 12 minutes until firm and no longer pink at the center.

Reduce
Continue cooking the onion in the beer over medium heat 5 minutes after lifting out the brats, until the liquid is nearly gone and the onion is golden.

Grill
Brush the brats with oil and grill over medium-high heat 6 minutes, turning, until the skins are browned and blistered and the surface crackles audibly.

Toast the hoagie roll cut-side down, spread with wholegrain mustard, add brats, onions, drained sauerkraut, and black pepper, then serve hot.
