On a board, pound the chicken breast even, then rub with olive oil, smoked paprika, half the minced garlic, salt and black pepper.

Whisk
In a small bowl, whisk the mayonnaise, lemon juice and remaining minced garlic until smooth and pale, then set the lemon-garlic mayonnaise aside.

Grill the chicken over medium-high heat 5 to 6 minutes per side until well marked and juices run clear with no pink at the thickest point.

Place the gluten-free bun cut sides down on the grill over medium heat 1 to 2 minutes until lightly golden and warmed through.
