Prep On a board, dice the onion, chop the tomato and cilantro, and grate the cheddar so everything is ready to build.

Grill Set a grill or grill pan to medium-high and cook the pork hot dogs 6 to 8 minutes, turning often, until the skins are charred and split.

Grill Toast the split whole wheat hot dog bun cut-side down over medium-high heat about 1 minute, until the surface turns golden and lightly crisp.

Plate Spread warm black beans across bun and plate, lay dogs on top, scatter cheddar, onion, tomato, cilantro and mustard, and serve with lime wedges.
