Combine ground chicken, breadcrumbs, beaten egg, minced garlic, oregano, salt and pepper, then shape into one patty wider than the brioche bun.

Whisk
Stir the mayonnaise with the Dijon mustard in a small bowl until smooth and evenly blended into a garlic mayonnaise.

Heat olive oil in a skillet over medium-high heat and cook the patty 5 to 6 minutes per side until deeply browned and 165F inside.

Melt
Lay Monterey Jack over the patty, cover the skillet, and cook over low heat 1 minute until the cheese slumps and glosses.

Plate
Toast bun halves cut-side down over medium heat 1 minute until golden, spread mayonnaise, stack lettuce, patty, tomato and onion, then serve.
