Prep
Divide 360g beef mince into two portions (180g each). Combine each portion with 0.5 tsp garlic powder, 0.5 tsp onion powder, 0.5 tsp salt, and 0.25 tsp black pepper. Shape each into one 12cm patty. Finely dice 2 shallots (80g total) and mince 2 garlic cloves. Mix 2 tsp cornstarch with 2 tbsp cold water.

Sear
Heat 1 tbsp oil in a large skillet over high heat. Cook both beef patties 3 minutes per side, pressing gently for full contact, until a deep crust forms. Internal temp medium. Remove and rest on a plate.

Build
In the same pan over medium heat, add 20g dairy-free butter and cook the diced shallots 2–3 minutes until softened. Add minced garlic, cook 30 seconds until fragrant. Pour in 400ml beef stock, 2 tbsp Worcestershire sauce, and 2 tsp tamari.

Simmer
Bring the mixture to a simmer over medium heat. Stir in the cornstarch slurry and cook 2–3 minutes, stirring constantly, until the gravy reaches a coating consistency. Season with a pinch of salt and pepper. Transfer to a jug.

Fry
In a separate skillet, heat the remaining 1 tbsp oil over medium heat. Fry 2 large eggs 2–3 minutes until the whites are fully set and the yolks remain runny.

Plate
Divide 400g cooked white rice between two deep bowls. Lay one beef patty on top of each portion, then top each with one fried egg. Pour the brown gravy generously over everything and serve immediately.
