Prep
Mix tamari, mirin, and brown sugar in a small bowl until sugar dissolves. Wet hands and shape sushi rice into rectangular blocks matching Spam slice dimensions, about 2cm thick. You will make 6 musubi pieces.
Sear
Heat a non-stick pan over medium-high heat with no oil. Working in two batches of 3 Spam slices each, cook each slice 2 minutes per side until golden. Pour half the glaze over the first batch and cook 30 seconds per side until sticky. Repeat with remaining Spam and glaze. Each batch takes about 5–6 minutes total.
Wrap
Place each rice block on lower third of a nori sheet. Lay glazed Spam on top. Fold nori around rice and Spam, pressing to seal. Moisten edge to stick. Repeat for all 6 pieces.
Plate
Arrange musubi on a serving plate with pickled ginger and tamari for dipping alongside. Serve immediately.
