Jalapeno Popper Burger
A stuffed ground beef patty filled with cream cheese, cheddar and jalapeno in the style of a jalapeno popper, plus crisp bacon. The patty is pan-seared, finished with a slice of melting cheddar, and served on a toasted brioche bun with chipotle mayonnaise.

Prep
Seed and finely dice the jalapeno, grate the cheddar, then mash both with the cream cheese until evenly combined and streaked with green flecks.

Fry
Cook the bacon in a skillet over medium heat 5 minutes until the fat renders and the strips crisp and darken, then drain.

Build
Form the beef into two thin patties, spread the filling over one, seal the second on top and pinch the edges. Season outside with salt, pepper and paprika.

Sear
Heat the vegetable oil over medium-high and sear the stuffed patty 3 to 4 minutes per side until deeply browned and the centre reaches 70C, then melt the cheddar slice on top.

Plate
Toast the brioche bun cut-side down 1 minute, stir the mince chipotle into the mayonnaise, spread on the base, add the patty and bacon, and close.
