Prep
Chop 1 scallion and mince 1 garlic clove. Blend scallion, garlic, 0.5 scotch bonnet pepper, 1.5 tsp allspice, 0.5 tsp thyme, 0.5 tsp brown sugar, 1 tbsp soy sauce, 1.5 tsp lime juice, and 1.5 tsp oil into a thick paste. Coat 350g bone-in chicken pieces thoroughly, cover, and marinate at least 2 hours or overnight in the refrigerator.

Grill
Heat grill to medium heat (180–200C). Place marinated chicken on the grate and grill 25–35 minutes, turning every 8–10 minutes. Cook until skin is slightly charred and internal temperature reaches 75C at the thickest part.

Rest and plate
Let chicken rest 5 minutes on a warm plate. Arrange with cooked rice and peas, season with salt and black pepper to taste, and serve.
