Prep Divide the beef into two thin patties, season both sides with salt and pepper, then seal the folded cheese inside pinched edges.

Sear Cook the stuffed patty in a dry cast-iron skillet over medium-high heat for 4 to 5 minutes until a deep brown crust releases.

Sear Flip once and cook 4 to 5 minutes over medium-high heat until browned and 160F inside, keeping the seal intact so cheese stays trapped.

Toast Melt the butter and toast the cut sides of the hamburger bun over medium heat for about 1 minute until golden brown.

Plate Rest the patty 5 minutes, spread mustard on the bun, add onion and pickle, set the patty on top, then cap and serve.
