Juicy Lucy
A single ground beef patty stuffed with a molten core of American cheese, seared hard so the cheese melts inside before the exterior crusts. Served on a toasted bun with dill pickles, yellow onion, and yellow mustard, the cheese oozes out with the first bite.

Instructions
1
Prep
Divide the beef into two thin patties, season both sides with salt and pepper, then seal the folded cheese inside pinched edges.
2
Sear
Cook the stuffed patty in a dry cast-iron skillet over medium-high heat for 4 to 5 minutes until a deep brown crust releases.
3
Sear
Flip once and cook 4 to 5 minutes over medium-high heat until browned and 160F inside, keeping the seal intact so cheese stays trapped.
4
Toast
Melt the butter and toast the cut sides of the hamburger bun over medium heat for about 1 minute until golden brown.
5
Plate
Rest the patty 5 minutes, spread mustard on the bun, add onion and pickle, set the patty on top, then cap and serve.
