Prep Divide the ground beef into two thin equal patties, season both sides with salt and pepper, pressing each wider than the bun.

Stuff Fold the American cheese into a square, centre it on one patty, top with the second and crimp the edges tightly to seal.

Sear Heat a dry cast-iron skillet over medium-high 3 minutes, then cook the stuffed patty 4 minutes until a dark crust forms and it releases.

Sear Flip and cook 4 minutes more over medium-high until the second side is deeply browned and the centre feels soft and molten when pressed.

Plate Toast the bun in butter, rest the burger briefly, spread ketchup and mustard, add onion and dill pickle, cap and serve immediately.
