Lamb Kebab Burger

Combine ground lamb, garlic, cumin, coriander, mint, half the parsley, salt and pepper in a bowl; mix gently and shape into one 3/4-inch-thick patty.

Rest
Chill the patty uncovered for 10 minutes.

Sear
Heat olive oil in a skillet over medium-high heat; add the patty and cook 3–4 minutes per side until deep brown crust forms and internal juices run clear.

Toast
Split brioche and toast cut-side down in the same skillet over medium heat for 1 minute until golden and crisp.

Whisk yogurt, garlic and lemon juice until smooth. Spread sauce on both bun halves, layer lettuce, patty, tomato and onion, top with remaining parsley, close and serve.

Assemble and serve immediately while the patty is warm.
