Prep
Finely dice onion and red pepper. Finely grate garlic. Very finely mince lemongrass white parts. Whisk together tamarind paste, palm sugar, fish sauce, and sliced chilli until sugar dissolves. Measure out lime juice. Slice cucumber and thinly slice scallions.

Saute
Heat olive oil in a large frying pan over medium heat. Add onion and red pepper, cook 5–6 minutes until softened. Add garlic and lemongrass, cook 2 minutes until fragrant. Stir in tomato paste and smoked paprika, cook 2 minutes until paste darkens.

Sear
Add prawns to sofrito over medium-high heat, cook 1.5 minutes per side until pink and opaque throughout.

Glaze
Pour tamarind mixture over prawns, toss over high heat 1–2 minutes until glossy and coats everything. Stir in lime juice and remove from heat.

Plate
Spoon rice into bowls, arrange prawns and sauce on top. Add cucumber alongside, scatter coriander and scallions over the dish. Serve with lime wedges.
