Instructions

Prep Scrub the russet potato, prick it all over with a fork and set the oven to 400F (200C).

Bake Roast the potato directly on the oven rack at 400F for 45 minutes until a knife slides through the center with no resistance.

Crisp Chop the bacon, then cook it in a cold skillet over medium heat 8 minutes until the fat renders and pieces are deep brown.

Build Scoop the hot potato flesh into a bowl, mash with butter, 2 tablespoons sour cream, salt, pepper, then fold in half the grated cheddar and half the bacon.

Plate Spoon the potato into a serving bowl, top with remaining cheddar, bacon, sliced scallions and the last tablespoon of sour cream.
