Instructions
1
Prep
Peel and cut sweet potatoes into 2cm cubes. Mince garlic finely. Season chicken thighs with salt and pepper. Mix maple syrup, tamari, and water in a small bowl.
2
Roast
Toss sweet potato cubes with 1 tbsp oil, smoked paprika, and a pinch of salt on a baking tray. Place in a 200°C oven for 22–25 minutes, turning halfway, until golden and tender.
3
Sear
Heat 1 tbsp oil in a large oven-safe skillet over medium-high heat. Place chicken thighs smooth-side down, sear 5–6 minutes without moving until deep golden. Flip and cook 3–4 minutes until the underside is golden.
4
Glaze
Add garlic and thyme to the pan, cook 30 seconds until fragrant. Pour the maple-tamari mixture over chicken. Simmer 2–3 minutes, spooning glaze continuously, until sauce reduces and all chicken reaches 75°C internal temperature.
5
Plate
Transfer roasted sweet potatoes to serving plates. Top with glazed chicken thighs and spoon all pan juices over. Serve immediately.
