Prep
Dice 60g zucchini finely, quarter 40g cherry tomatoes, slice 1 scallion. Defrost 32g petits pois. Tear 4 basil leaves, chop 1 tsp parsley. Whisk 4 eggs with 72g ricotta, 20g Parmigiano, 10g flaxseed, 6g chia seeds, 0.25 tsp salt, 0.25 tsp pepper until smooth.

Saute
Heat 0.5 tbsp olive oil in a small pan over medium heat. Add zucchini and scallion, cook 3 minutes until softened but vibrant green. Cool fully on a plate.

Build
Fold cooled zucchini mixture, tomatoes, petits pois, basil, and parsley into egg mixture until evenly distributed. Divide between 4 greased muffin holes in a 6-hole muffin tin, filling three-quarters full.

Bake
Preheat oven to 180°C. Grease a 6-hole muffin tin with 0.5 tbsp olive oil. Bake frittatas 18–20 minutes until tops are set, lightly golden, and a skewer inserted comes out clean.

Rest
Cool frittatas in the tin 10 minutes. Run a knife around each, lift onto a rack, cool fully. Portion into 2 airtight containers of 2 frittatas each.

Plate
Reheat 2 frittatas in the microwave for 45 seconds or in the oven at 160°C for 5 minutes. Serve with rocket salad or olives for extra freshness.
