Whisk together 56g chia seeds, 320ml almond milk, 16g maple syrup, 0.8 tsp vanilla extract, and 0.1 tsp sea salt in a medium bowl until no clumps remain. Let rest 5 minutes, then whisk vigorously again to break up any chia clusters.

Cover the mixture and refrigerate at 4°C for at least 4 hours or overnight until thick and spoonable, stirring once halfway through if desired.

Divide the chilled chia pudding evenly between 2 airtight cups or jars, filling each about three-quarters full with the set pudding.
