Prep
Drain cottage cheese of excess liquid. In a medium bowl, whisk together cottage cheese, peanut butter, maple syrup, 14g cocoa powder, vanilla extract, and sea salt until smooth and evenly chocolatey. Stir in chia seeds, ground flaxseed, and dark chocolate chips until a thick, scoopable mixture forms.
Build
Cover the mixture and refrigerate at 4°C for 45 minutes until chia and flax absorb moisture and the mixture firms up enough to scoop cleanly.
Finish
Working quickly to keep the mixture cold, scoop and gently roll into 6 bites of roughly 55g each. Roll each bite in extra cocoa powder to coat completely, then place on a lined tray and refrigerate for 15 minutes until fully set.
Plate
