Drain cottage cheese of excess liquid. Finely chop 64g raw almonds and 20g raw almonds separately for coating. In a medium bowl, whisk together cottage cheese, honey, vanilla extract, and sea salt until smooth. Stir in chopped almonds, chia seeds, and ground flaxseed until a thick, scoopable mixture forms.

Cover and refrigerate the mixture at 4°C for 45 minutes until chia and flax absorb moisture and the mixture firms up noticeably.

Finish

Scoop mixture into 6 bites of roughly 50g each, working quickly to keep cold. Gently roll each into a ball, then coat by rolling in the extra chopped almonds until fully covered. Return to a lined tray.

Rest

Refrigerate coated bites at 4°C for 15 minutes until fully set and firm to the touch.

Plate

Divide 6 bites into 2 airtight containers, 3 bites per container. Refrigerate up to 4 days. Serve chilled with sliced apple or fresh berries on the side.
