Prep
Drain cottage cheese of excess liquid. Finely grate lemon zest (about 1 tbsp). In a medium bowl, whisk together 220g cottage cheese, 20g honey, lemon zest, 1 tbsp lemon juice, 0.5 tsp vanilla extract, and 0.1 tsp sea salt until smooth. Stir in 12g poppy seeds, 16g chia seeds, and 14g ground flaxseed until a thick, scoopable mixture forms.
Simmer
Cover the bowl and refrigerate at 4°C for 1 hour. The chia and flax will fully absorb moisture and the mixture will firm up noticeably. Check that it holds its shape when scooped.
Build
Working quickly to keep the mixture cold, scoop and gently roll the chilled mixture into 6 bites of roughly 50g each. Roll each bite in 6g extra poppy seeds to coat the outside lightly. Return coated bites to a parchment-lined tray.
Rest
Refrigerate the poppy-seed-coated bites for 15 minutes at 4°C until fully set and firm to the touch. Portion into 2 airtight containers of 3 bites each. Store refrigerated up to 4 days.
Plate
Portion 3 bites per serving into a bowl or small plate. Pair with fresh blueberries or a small cup of brewed green tea for a bright, fresh finish. Serve chilled.
