Prep
Drain excess liquid from 220g cottage cheese. Crush 12g freeze-dried strawberries to coarse powder. In a medium bowl, whisk cottage cheese, 20g maple syrup, 0.4 tsp vanilla extract, and 0.1 tsp sea salt until smooth. Stir in crushed strawberries, 30g dark chocolate chips, 16g chia seeds, and 14g ground flaxseed until thick and scoopable.
Simmer
Cover bowl and refrigerate at 4°C for 1 hour, stirring occasionally, until chia and flax fully absorb moisture and mixture firms noticeably.
