Drain cottage cheese of excess liquid. Toast 32g desiccated coconut in a dry pan over medium heat for 2-3 minutes until golden and fragrant, then cool on a plate. Whisk cottage cheese, maple syrup, vanilla extract, and sea salt in a bowl until smooth. Stir in cooled toasted coconut, chia seeds, and ground flaxseed until a thick, scoopable mixture forms.

Cover the mixture and refrigerate for 1 hour until chia and flax fully absorb moisture and the mixture firms up, reaching a moldable consistency.

Working quickly to keep the mixture cold, scoop and gently roll into 6 bites of roughly 50g each. Roll each bite in the extra desiccated coconut until fully coated.
