Soak 116g pitted Medjool dates in warm water 10 minutes, drain well. Measure 80g raw almonds, 10g chia seeds, 0.3 tsp ground cardamom, 0.25 tsp vanilla extract, 0.1 tsp fine sea salt, and finely chop 16g raw almonds for coating.

Add 80g almonds to a food processor, pulse 8 to 10 times until coarsely chopped with texture. Add drained dates, chia seeds, cardamom, vanilla, and salt; blend on medium speed until a thick, sticky dough forms, about 1 to 2 minutes.

Scoop dough into 6 portions of roughly 35g each, roll firmly between your palms into tight bites. Roll each bite in chopped almonds to coat fully, pressing gently so coating adheres.
