Soak 112g pitted Medjool dates in warm water for 10 minutes, drain well. In a food processor, pulse 80g raw walnut halves 6–8 times until coarsely chopped with texture. Add soaked dates, 12g cocoa powder, 10g chia seeds, 0.5 tsp vanilla extract, and 0.1 tsp sea salt.

Blend the mixture on medium speed until a thick, sticky dough forms, about 1 minute. Scrape down the sides and pulse for 15 seconds to fully incorporate all ingredients until homogeneous.

Finish

Scoop dough into 6 balls of roughly 35g each, pressing firmly between your palms so they hold their shape without crumbling. Roll each ball in 8g extra cocoa powder to coat lightly, tapping off excess.

Plate

Refrigerate coated balls on a lined tray for at least 30 minutes until firm. Portion into 2 airtight containers of 3 balls each. Serve chilled, paired with fresh raspberries or cherries for brightness and contrast.
