Prep
Toast 52g chopped pecans in a dry pan over medium heat for 3–4 minutes until fragrant; cool on a plate. In a large bowl, combine 88g rolled oats, cooled pecans, 12g chia seeds, 12g ground flaxseed, 0.3 tsp cinnamon, and 0.1 tsp sea salt.
Build
Add 80g almond butter, 46g maple syrup, and 0.4 tsp vanilla extract to the dry mixture. Mix with a sturdy spatula over medium-low intensity for 2–3 minutes until a thick, sticky dough forms, adding water 1 tsp at a time if too dry to bind.
Finish
Scoop and roll dough into 6 bites of roughly 38g each, pressing firmly so they hold shape. Refrigerate on a lined tray for at least 30 minutes until fully firm.
Plate
