Soak 72g Medjool dates in warm water 10 minutes, drain. Measure 56g hemp seeds, 32g desiccated coconut, 14g cocoa powder, 30g maple syrup, 10g chia seeds, 0.4 tsp vanilla extract, 0.1 tsp sea salt, and 12g extra coconut for rolling.

Build 1

Add soaked dates to a food processor, blend into a thick paste, scraping sides once or twice. Add hemp seeds, 32g coconut, cocoa powder, maple syrup, chia seeds, vanilla, and salt.

Build 2

Pulse mixture until a thick, sticky dough forms, scraping and pulsing 15 seconds more to fully incorporate all ingredients together.

Finish

Scoop dough into 6 balls of roughly 38g each, pressing firmly to hold shape. Roll each ball in extra desiccated coconut to coat evenly. Refrigerate on a lined tray 30 minutes until firm.

Portion into 2 airtight containers of 3 balls each. Refrigerate up to 5 days or freeze up to 60 days. Serve with fresh strawberries or blueberries.
