Prep
Soak 104g raw cashews in room-temperature water for 2 hours, drain well. Zest 1 medium lemon to yield roughly 1 tbsp, then juice it for 1 tbsp juice. Measure 40g desiccated coconut, 36g maple syrup, 10g chia seeds, 0.5 tsp vanilla extract, and 0.1 tsp fine sea salt.
Build 1
Add soaked cashews to a food processor, blend until smooth and slightly chunky paste forms, scraping sides once or twice. Room temperature, 2 to 3 minutes until paste consistency.
Build 2
Add 40g desiccated coconut, maple syrup, lemon zest, lemon juice, chia seeds, vanilla, and sea salt to the processor. Blend until thick, sticky dough forms, 2 to 3 minutes, scraping occasionally. Dough should hold together when pressed.
Rest
Refrigerate dough for 20 minutes at room temperature until chia seeds absorb moisture and dough firms enough to roll without sticking.
Finish
Scoop and roll dough into 6 bites of roughly 38g each, pressing firmly to hold shape. Roll each bite in 12g extra desiccated coconut to coat evenly. Refrigerate on a lined tray for 30 minutes until fully firm.
