Prep
Soak 100g pitted Medjool dates in warm water 10 minutes, drain. Stir 72g tahini well. Measure 72g rolled oats, 16g sesame seeds, 8g chia seeds, 0.4 tsp vanilla extract, 0.1 tsp sea salt, and 12g extra sesame seeds for coating.

Toast
Heat a dry pan over medium heat. Add 16g sesame seeds, toast 2 to 3 minutes until golden and fragrant, stirring occasionally. Tip onto a plate to cool completely.

Build
In a food processor, blend cooled dates into a thick paste, scraping sides once or twice. Add tahini, rolled oats, toasted sesame seeds, chia seeds, vanilla, and sea salt. Pulse until a thick, sticky dough forms.

Finish
Scoop dough into 6 bites of roughly 45g each, roll firmly between your palms so they hold shape. Roll each bite in extra sesame seeds to coat completely. Refrigerate on a lined tray at least 30 minutes until firm.

Portion cooled bites into 2 airtight containers, 3 bites each. Refrigerate up to 5 days or freeze up to 60 days. Serve with fresh orange segments or mint tea.
